Ingredients:

  • 2 cups sprouted moong beans
  • 1 cup puffed rice (murmura)
  • 1/2 cup finely chopped tomatoes
  • 1/2 cup finely chopped onions
  • 1/4 cup finely chopped cucumber
  • 1/4 cup finely chopped bell peppers (any color)
  • 1 green chili, finely chopped (adjust according to spice preference)
  • 1/4 cup chopped fresh coriander leaves (cilantro)
  • 1 tablespoon tamarind chutney
  • 1 tablespoon green chutney (mint and coriander chutney)
  • 1 teaspoon chaat masala
  • Salt to taste
  • Sev (crispy chickpea flour noodles) for garnish (optional)
  • Lemon wedges for serving

Instructions:

  1. Prepare Sprouts:
    • Rinse and soak moong beans overnight.
    • Drain the water and tie the soaked moong beans in a muslin cloth.
    • Allow them to sprout for about 8-10 hours or until you see small sprouts.
  2. Assemble Bhel:
    • In a large mixing bowl, combine the sprouted moong beans, puffed rice, chopped tomatoes, onions, cucumber, bell peppers, green chili, and fresh coriander.
  3. Add Chutneys and Spices:
    • Drizzle tamarind chutney and green chutney over the mixture.
    • Sprinkle chaat masala, roasted cumin powder, and salt to taste.
  4. Mix Well:
    • Gently toss all the ingredients until well combined. Ensure that the chutneys and spices are evenly distributed.
  5. Garnish:
    • If desired, garnish with sev for added crunch.
  6. Serve:
    • Divide the Sprout Bhel into individual servings.
    • Squeeze fresh lemon juice over each serving for a burst of citrusy flavor.
