Ingredients:
- 1 cup kodo millet
- 1/2 cup yellow moong dal (split yellow lentils)
- 2 tablespoons ghee or oil
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1 small onion, finely chopped
- 1-inch piece of ginger, grated or finely chopped
- 2 cloves garlic, minced (optional)
- 1 medium tomato, chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1 teaspoon coriander powder
- Salt to taste
- 4 cups water
- Fresh cilantro leaves for garnish
- Lemon wedges for serving (optional)
Instructions:
- Rinse the kodo millet and moong dal under running water until the water runs clear. Soak them together in water for about 20-30 minutes. Drain and set aside.
Preparation:
- Heat ghee or oil in a pressure cooker or deep pot over medium heat.
- Add cumin seeds and mustard seeds. Let them splutter.
- Add chopped onions, green chili, grated ginger, and minced garlic (if using). Sauté until the onions turn golden brown.
- Add chopped tomatoes and cook until they soften.
- Add turmeric powder, coriander powder, cumin powder, and salt. Mix well.
- Add drained kodo millet and moong dal to the pot. Stir well to coat the grains with the spices.
- Pour in 4 cups of water and mix everything together.
- Close the pressure cooker lid and cook for 3-4 whistles (around 10-12 minutes) or cook in a pot until the millet and dal are soft and well-cooked.

- Once the pressure releases naturally, open the cooker carefully.
- Garnish the khichdi with freshly chopped cilantro leaves.
