Ingredients:

  • 1 cup barnyard millet
  • 2 cups water
  • 2 tablespoons ghee or oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 small onion, finely chopped
  • 1-inch piece of ginger, grated or finely chopped
  • 2 cloves garlic, minced (optional)
  • 1 carrot, diced
  • 1/2 cup green peas (fresh or frozen)
  • 1/4 cup finely chopped green beans
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • Fresh coriander leaves for garnish
  • Lemon wedges for serving (optional)

Instructions:


    Preparation:

    • Rinse the barnyard millet under running water until the water runs clear. Drain and set aside.

    Cooking Barnyard Millet Pulao:

    • In a deep pan or pot, heat ghee or oil over medium heat.
    • Add cumin seeds and mustard seeds. Let them splutter.
    • Add chopped onions, green chili, grated ginger, and minced garlic (if using). Sauté until the onions turn golden brown.
    • Add diced carrots, green peas, and chopped green beans. Sauté for a few minutes until the vegetables are slightly tender.
    • Add turmeric powder, coriander powder, cumin powder, and salt. Mix well.
    • Add the rinsed and drained barnyard millet to the pan. Stir well to coat the grains with the spices and vegetables.
    • Pour in 2 cups of water and mix everything together.
    • Cover the pan with a lid and let the mixture simmer on low heat for about 15-20 minutes, or until the barnyard millet is cooked and water is absorbed. Stir occasionally to prevent sticking.

    Serve:

    • Once the barnyard millet is cooked, remove the pan from heat.
    • Garnish the foxtail barnyard Pulao with freshly chopped coriander leaves.
    • Serve hot with lemon wedges on the side for squeezing over the pulao (optional).
